SALAD DRESSING INGREDIENTS

Checking out the photo posted above, you’re hopefully thinking, “This is going to be easy.” Well, guess what? That’s exactly what you’ll experience gathering the various ingredients and making this creamy salad dressing recipe. You’ll only need some pantry staples – olive oil, red wine vinegar, kosher salt and black pepper. Then add in some standard fridge items like fresh garlic, fresh lemon juice, mayonnaise, cheese and a fresh herb. If you don’t have these items at the ready, a quick run to the grocery store will do the trick.

OLIVE OIL AND VINEGAR

So there’s olive oil and then there’s extra virgin olive oil. Sometimes we ask that you use one and not the other. Why? Well, for a salad dressing where the oil isn’t heated, it all comes down to flavour. Extra-virgin olive oil is considered unrefined, meaning it’s not treated with chemicals, nor is it heated during the extraction from the olives. It also has a low level of oleic acid, contributing to its golden-green colour and slightly peppery finish. It delivers way more flavour than regular olive oil, which we still recommend only for cooking due to its high smoke point. Here’s some nutrition information: EVOO may help prevent heart disease, promote brain function, and protect against certain types of cancer. 

We then paired the EVOO with red wine vinegar. Made from fermented red wine, we love the bright tanginess it adds to this dressing. If you’re in a pinch, you can swap it with balsamic vinegar, seasoned rice wine vinegar or apple cider vinegar, but we think having red wine vinegar in the pantry is always a good idea.

MAYONNAISE AND CHEESE

Blending mayonnaise and cheese into a salad dressing recipe always works. For this Mediterranean-inspired recipe, we grabbed two favourites, feta cheese for a nod to Greece and Parmesan cheese for those Italian vibes. Of course, you can experiment with other types of cheese too, like blue cheese, ricotta cheese and a manchego or asiago. As mentioned in the VIDEO created for this post, keep the salad dressing in an airtight container in the fridge, and it’ll last for about a week. That said, it never lasts that long, usually all gone a day or two after making it. So good.

Tools to make this dressing include an immersion blender, a bowl with whisk or a mason jar.

HOW TO MAKE THE DRESSING

We’re suggesting three proven ways to make this quick and easy salad dressing recipe. The first is to add all of the ingredients into a bowl and whisk to combine. The second is to place all of the ingredients into a mason jar, add the lid and shake it up good. If using the whisk or mason jar methods, just remember to finely chop both the fresh parsley and cloves of garlic. 

The second option for making this dressing is to zip everything together using a blender, mini food processor or an immersion blender. We actually use the immersion blender more than any other method. Its quick and easy application is evident in the instructions.

HOW TO ENJOY

Yes, you can use this CREAMY MEDITERRANEAN SALAD DRESSING on our GREEN SALAD, this SPINACH AND FENNEL SALAD, or try it paired with this ROASTED BEET SALAD. This dressing is also an upgrade to a Greek dressing, so try it on our GREEK SALAD too. Yet, in a perfect world, we think it best enjoyed on a salad crafted with Mediterranean veggies.
