Here’s how to make our EASY SUMMER COUSCOUS SALAD:
Simple ingredients gathered to create a stellar summer salad.
INGREDIENTS
This ingredient photo is a little different from others in that one component, the dressing is already assembled. Everything else is easy to find. For best results, pick up plump, juicy cherry tomatoes and red seedless grapes. The flavour of this salad is all about pronounced fresh taste, so these ingredients create a very special dish.
You can prepare the couscous using vegetable or chicken broth.
COUSCOUS
This recipe has been crafted using small-grain couscous made of crushed durum wheat semolina, not the ground type used for pasta. Some pasta salads call for pearl couscous, AKA Israeli couscous, which is pasta. Feel free to make this recipe using either, although cooking the pasta will take a little longer.
Make sure to grate the garlic for the dressing. Way more flavour!
DRESSING
The dressing for the salad involves whisking oil and lemon juice together with a pop of garlic. Note that the garlic cloves are grated as opposed to being chopped or minced. We used a Microplane (link to purchase down below) to accomplish this and love the way the flavour of the garlic blends into the salad.
Toss the tomatoes, grapes and green onion in the dressing to combine.
FRUIT AND VEGGIES
Adding halved cherry tomatoes and succulent seedless red grapes not only gives this couscous concoction a surprising layer of sweetness, but it also adds colour. Feel free to include seasonal veggies too! Corn, cucumbers, zucchini and peas work nicely. Toss them with chopped green onions and the dressing becomes pretty tasty, but don’t stop there. One of the best moments in this fresh salad recipe happens when we toss in the couscous. Amazing!
Pick your favourite herb and sprinkle the salad with pomegranate seeds or diced peaches.
TOPPINGS
We love the addition of crumbled feta and chopped fresh herbs to the top of the dish. The feta has a pleasing saltiness while the herbs give yet another bit of freshness. Feel free to try this recipe with different herbs, remembering that dill, cilantro, basil, parsley, chives and mint all work well. Last thing about the toppings is deciding between pomegranate seeds and fresh peaches. Both work really well, so we’ll leave the choice to you.
Look how beautiful!
WITH POMEGRANATE SEEDS
We better show how nice the pomegranate seeds look on the dish. The pop of red sure is striking, and you just know those tangy little jewel-like seeds are gonna pop in your mouth as you enjoy! Try this version with our BEER CAN CHICKEN or GRILLED RACK OF LAMB (coming soon!).
This looks good enough to eat!
WITH DICED PEACHES
How could we not also show off the peach-garnished version? Just make sure you’re dicing up a perfectly ripened summer peach. It will almost melt in your mouth and the enticing aroma the peach gives off makes for a glorious side dish. Try this version with our GRILLED JUMBO SHRIMP or our GRILLED BEEF TENDERLOIN.
