  1. Prepare dressing: Whisk together ingredients for dressing in a small bowl. 
  2. Prepare fruit and veggie mix: Place tomatoes, grapes and chopped green onions in a medium-sized bowl. Add dressing and toss to combine.
  3. Prepare couscous: Pour broth into a small saucepan. Add salt, garlic powder and butter. Stir then bring to a boil. Add couscous, stir to combine, cover then remove from heat and leave to stand for 5 minutes. Fluff before assembling the salad.
  4. Assemble salad: Place the couscous into a medium-large sized bowl. Add fruit and veggie mix, tossing gently to combine. Transfer salad to a serving bowl or platter. Sprinkle with feta, fresh herbs and either pomegranate seeds or peaches. Serve immediately.

INGREDIENTS

This ingredient photo is a little different from others in that one component, the dressing is already assembled. Everything else is easy to find. For best results, pick up plump, juicy cherry tomatoes and red seedless grapes. The flavour of this salad is all about pronounced fresh taste, so these ingredients create a very special dish.

COUSCOUS

This recipe has been crafted using small-grain couscous made of crushed durum wheat semolina, not the ground type used for pasta. Some pasta salads call for pearl couscous, AKA Israeli couscous, which is pasta. Feel free to make this recipe using either, although cooking the pasta will take a little longer.

DRESSING

The dressing for the salad involves whisking oil and lemon juice together with a pop of garlic. Note that the garlic cloves are grated as opposed to being chopped or minced. We used a Microplane (link to purchase down below) to accomplish this and love the way the flavour of the garlic blends into the salad.

FRUIT AND VEGGIES

Adding halved cherry tomatoes and succulent seedless red grapes not only gives this couscous concoction a surprising layer of sweetness, but it also adds colour. Feel free to include seasonal veggies too! Corn, cucumbers, zucchini and peas work nicely. Toss them with chopped green onions and the dressing becomes pretty tasty, but don’t stop there. One of the best moments in this fresh salad recipe happens when we toss in the couscous. Amazing!

TOPPINGS

We love the addition of crumbled feta and chopped fresh herbs to the top of the dish. The feta has a pleasing saltiness while the herbs give yet another bit of freshness. Feel free to try this recipe with different herbs, remembering that dill, cilantro, basil, parsley, chives and mint all work well. Last thing about the toppings is deciding between pomegranate seeds and fresh peaches. Both work really well, so we’ll leave the choice to you.
