I’ve been enjoying a lot of freshly prepared salads as of late; must be all the wonderful fresh fruits and vegetables available at my favourite farm stands and local markets. But a truly great salad is not only what we toss in it, but also the dressing we add that can take a simple salad from ho-hum to amazing. Case in point; this glorious GREEN GODDESS SALAD DRESSING.

Originally created in 1920s San Francisco by chef Philip Roemer of the Palace Hotel, this dressing was a mainstay on restaurant menus for years. It was made with olive oil, anchovies, chives, and tarragon vinegar, and was often served more as a sauce than a salad dressing. I’m hoping our version is as noteworthy as the original.

DAIRY

One of the hallmarks of this salad dressing recipe is its creaminess. We can attribute that to the inclusion of full-fat sour cream and homogenized milk; the “low-fat” versions just won’t do. That said, you can swap the sour cream for plain Greek yoghurt if you have that on hand. I’ve included mayonnaise in the dairy photo because of the richness and creamy texture it contributes despite not being a dairy product. Lastly, that blue cheese? Keep reading.

BLUE CHEESE

We’re hoping this recipe inspires those who’ve never tried blue cheese to give it a taste. If you’re feeling the blue vibe, good news; there are many to choose from. For those wanting a lighter flavour, try this recipe using cambozola or gorgonzola. If you’d like a more pronounced flavour, make it using Blue Stilton or my favourite, Roquefort. FRESH HERBS

Getting the dressing green is all thanks to a gathering of favourite, flavourful, fresh herbs. We used fresh dill, parsley and chives for the version featured in this story, but feel free to make the recipe using your favourites. Try adding cilantro, mint, tarragon and basil. We know you’ll appreciate the fresh flavour the herbs give the dressing as much as we do. Failing that, you can also try a more classic approach by adding capers or green onions. It won’t be as colourful but it will still have a pleasing flavour.
