3-4 field tomatoes
¼ cup feta cheese
3 green onions, finely diced
12 fresh basil leaves, thinly sliced

Get ready for something yummy; it’s time to make this FRESH PEACH AND TOMATO SALAD!
INGREDIENTS
The first time we served it, someone said it reminded them of a tomato caprese salad, but better! The ingredients needed to make this sensational tomato-peach salad are all readily available at your local farm stand, farmer’s market or favourite grocery store. As always, we suggest purchasing organic products whenever possible. Although sometimes more expensive, we do think it’s money well spent; you will taste the difference.
PEACH AND TOMATO
For best results, make this salad using freshly picked, locally grown tomatoes and peaches. Our favourite tomatoes include heirloom, cherry tomatoes, Roma and beefsteak varieties, and all are rich in essential vitamins and nutrients including vitamin C, potassium, and the antioxidant lycopene. When selecting the peaches for this salad, we suggest looking for freestone varieties like Redhaven, Harrow Diamond and Sentinel.
FETA CHEESE
Adding feta cheese to this salad gives it a pleasing bit of saltiness without overpowering it. We found a great GREEK FETA made with cow and goat’s milk that’s low in both cholesterol and saturated fat, making it a healthy option too. Before the cheese is crumbled over the peaches and tomatoes, we found that patting it with a paper towel makes it easier to work with and less messy. If feta isn’t your thing, try the recipe using fresh mozzarella or burrata cheese.
FLAVOUR ENHANCEMENTS
This FRESH PEACH AND TOMATO SALAD needed a little bit of something to enhance the flavours of the fresh fruit; adding diced green onion instead of red onion and some fresh basil is just the thing. If you don’t have fresh basil going in your garden, try adding fresh thyme, tarragon, mint or chives. Feel free to play with the fresh herbs to make this recipe your own.
LEMON VINAIGRETTE
We almost crafted a balsamic vinaigrette using maple syrup, balsamic vinegar and mustard, but then thought, “Nope, let’s keep it simple.” We’re talking lemon, honey and oil – that’s it. Adding a drizzle of the most basic of vinaigrettes is the way to go with this salad idea. Anything more might overpower the sweetness of the tomatoes and peaches. One thing to note; in the instructions for this vinaigrette, we add fresh chopped herbs, and in this case, chopped basil to mirror the garnish. Feel free to increase the amount of herbs used, or add in some different herbs to your taste.
SERVE
Let’s not overcomplicate serving this salad. Notice there is no direction to toss. Instead, assemble the peaches and tomatoes in an attractive way, either on a serving platter or in a shallow bowl. Then add the flavour enhancements and vinaigrette and present it as is. Serving it at table where guests help themselves is the way to go. It’s visually appealing and invites you to dig in!
