  1. Prepare the dressing: Place all of the dressing ingredients, except for the sugar (optional) and lemon juice, into a conventional blender, food processor, or a deep bowl for an immersion blender. Process until all of the herbs and garlic are finely chopped and the dressing has a creamy consistency. Add sugar to taste, if desired. Add lemon juice, then pulse for a few seconds more until blended.
  2. Prepare the lettuce: Remove and discard any blemished leaves from the lettuce. Divide the head down the middle lengthwise, then cut into 1-inch pieces. Rinse and spin the lettuce before transferring to a large salad bowl.
  3. Prepare salad: Add veggies to lettuce in large salad bowl. Drizzle with dressing and toss gently. Add more dressing if required.
  4. Transfer portions to plates, adding more dressing, if desired. Serve immediately.

Here’s a HEALTHY EVERYDAY SALAD WITH GREEN GODDESS DRESSING that you can have, well, every day!

True story: I make this salad at least once a week. It’s the one salad I make most often for weekend guests. Here’s why:

  • Everything about this salad is easy; it’ll be good to go, start to finish, in under 15 minutes!
  • It calls for a combination of any lettuce and fresh veggies you have on hand.
  • No fancy prep steps, just simply chop the veggie ingredients.
  • The GREEN GODDESS DRESSING is really, really tasty.

One last thing goes to the “healthy” moniker I included in the title of this salad recipe. Sure the dressing contains mayo, sour cream, and (wait for it!) blue cheese, but we’re adding it sparingly. The go-forward for healthy is lots of fresh vegetables that are packed with vitamins, minerals, and fibre. If you have access to organic and locally grown veggies, even better. Trust us, you’ll see how healthy can taste delicious!

Check out that display of crispy romaine lettuce and that assortment of vegetables. Pretty perfect, am I right? Now, don’t forget, we’re giving you the OK to make this recipe your own. Make it with everything from tomatoes, cucumbers, bell peppers and celery. You can also try this healthy salad recipe with green beans, cauliflower, broccoli, carrot, avocado, sweet peas, red onion and zucchini. Change it up by using leafy greens, iceberg lettuce or spinach in place of the romaine, or toss in your favourite nuts like almonds, pecans, walnuts or sunflower seeds. Gotta love that hit of protein and healthy fat!

Because we’re encouraging you to make this tossed salad recipe often, your goal is to make it with whatever you might have on hand. I did just that in planning this story, and this assortment certainly reflects it. Gotta tell you, it sure is a tasty combo. Love the sweetness of the tomatoes, cucumbers and red shepherd peppers along with the crunch of the celery and the spice of the radishes and green onion. Will I repeat this combination again? Oh, you know I will!

Sure I could have used our popular ASIAN or JAPANESE salad dressing. There was a second where I considered drizzling on our CREAMY RANCH or CLASSIC CAESAR DRESSING. Instead, we crafted something entirely new, and are we ever pleased with the results. This GREEN GODDESS DRESSING has a rich creaminess flavored with fresh herbs and our not-so-secret-anymore ingredient, blue cheese. Click HERE to watch the short video on how to make it.

SALAD BOWL

Although this story was written with the simple directions of placing the chopped veggies into a large salad bowl, adding the dressing, tossing and serving, there are other options too. The salad presented as is will serve six guests, but you can also portion it out and dress the salad accordingly to accommodate smaller numbers. Better still, place portions in small storage containers along with a single serving of the dressing to take to work as a healthy lunch option.

SERVE

Presenting the salad as is on smaller appetizer plates is the way to go with this one; no need to get fussy with the presentation. That said, I do like to drizzle a tiny bit more of the dressing onto the salad as a little flavour boost.
