There are only three essential ingredients that will require special attention: ricotta, hazelnuts and truffle honey (more about each in a bit). Everything else is standard pantry fare.

CHEESE

RICOTTA CHEESE is a whey cheese made from sheep, cow, goat, or Italian water buffalo milk. It has a soft, creamy texture, and although we’ve used it to amplify the flavour of our SHEET PAN TOMATOES & PEPPERS, RADISH TOAST and PEACH CHEESECAKE PARFAITS, this time the flavour of the cheese takes centre stage. The one important direction for using ricotta in this recipe is to bring it to room temperature by taking it out of the fridge an hour before you preparing. Doing so softens it, allowing it to whip up light and fluffy with just the tiniest amount of extra virgin olive oil.

WHIP

Whipping the light, soft cheese is easy, and you can use a hand mixer, stand mixer or food processor. Tossing some chopped fresh herbs and garlic in with the cheese and oil rounds out the base flavours of this ricotta dip. Whipping it lightens the texture, making it easy to spread. One suggestion on the whip; don’t do it too far ahead of time. Ideally, blend everything together minutes before you transfer the mixture to a serving bowl or plate.
