Here’s why our recipe for PEACH CHEESECAKE PARFAIT works:
GOOD STUFF
One look at the ingredients says it all – this dessert is made with things you probably already have on hand. The two ingredients that might send you off to a quick trip to the store are the yoghurt and ricotta cheese – they help build the creamy cheesecake-flavour profile.
FRESH FRUIT
As mentioned above, this dessert welcomes, and in fact encourages, substitutions. One rule we abide by: use the best, and if possible, locally grown, fruit at the height of the season. We tested the recipe using strawberries, blueberries, raspberries, cherries, and even apricots, peaches, plums and bananas (what?). They all worked perfectly.
CHEESECAKE
The cheesecake component comes from mimicking both a traditional crust and cheesecake filling. We tossed graham cracker crumbs with melted butter and sugar to create a crumble, and brightened the flavours with yoghurt, ricotta, sugar and lemon zest as a filling.
CLASSIC PARFAIT
Crafting the look of a classic parfait couldn’t be easier. Sprinkle some crumbs into the glass, add a few pieces of fruit, followed by a dollop or two of the yogurt-cheese cream mix. Repeat little by little until the glass is filled.
Bonus! If making your parfaits using blueberries, add a little drizzle of our BLUEBERRY SYRUP. Yum!
One last thing – don’t miss our call for gingersnap cookies. Tuck one right at the top of the glass and ta da! An instantly glorious dessert, ready to be enjoyed.
