Instructions
Remove sausage from casings. Place into a large soup pot or Dutch oven set on moderate-high heat. Stir sausage frequently as it cooks to break the meat up into little bits.
When the meat is no longer pink, add the onion, celery and garlic and cook until soft and fragrant.
Stir in the seasoning and cook for 1 minute. Stir in the carrot and pepper and cook for about 2 minutes until soft.

Although store-bought will work in a pinch, homemade is suggested.
Speaking of ingredients I do want to mention that you can also get creative when you go to make this recipe. Having now made it a number of times “as written”, I’m thinking next time I might add chopped kale or baby spinach.
Sausage, canned tomatoes and canned white kidney beans give the soup so much flavour.
SAUSAGE, BEANS AND TOMATOES
The sausage, beans and tomatoes used to make this soup are truly the superstars of the flavour profile. Use diced tomatoes, or for even more flavour splurge, buy premium plum tomatoes such as San Marzano. You can do the same with the beans, using varieties such as canned Romano, lupini or cannellini beans. The beans not only add flavour but they’re also packed with vitamins and protein too. Don’t forget to rinse and drain them before adding them to the pot.
As for the sausage, we found using fresh sausages gives the soup more flavour. Remember to select a mild, medium or spicy variety to suit your taste. Removing the meat from the casings is easy work. We’ve now made the soup using Italian sausage, chorizo, and mild turkey sausage and can confirm that they all worked perfectly, so pick a favourite and get cooking.

VEGETABLES
Onion, carrot and celery seem to make it into almost every soup we craft; these three vegetables are trusted flavour builders. We also added garlic to this soup, plus a yellow pepper which adds both colour and just a hint of sweetness. Finely chopping all of the veggies is the only time-consuming part of the recipe. Remember, if you have a family member or friend in the wings, call them into work. Many hands always make for light work.
Dried thyme and oregano are the perfect seasoning along with salt, pepper and chili flakes.
HERBS AND SPICES
Hopefully, the herbs and spices used in this recipe are already on hand. The kosher salt, black pepper, chili flakes, dried thyme and dried oregano contribute to both the flavour and enticing aroma of the finished soup. One final herb-related mention is adding fresh bay leaves to the soup during the simmering. Look for fresh bay leaves in the produce section of your grocery store, and if unavailable, add dried.
