Directions

  1. Prepare the burgers: Place all of the ingredients for the burgers into a large bowl and mix together by hand. Shape into four, equal sized patties. Cover and refrigerate for at least 1 hour.
  2. Prepare the grill: Turn the burners on the left and middle areas of the grill to high. Turn the burner on the far right to a low-moderate setting. Preheat the barbecue to 500°F.
  3. Prepare the burgers: When the barbecue comes to temperature, place the burgers down on the right side of the grill, close the lid and cook for 5 minutes. Stay close to the grill watching for flare ups. After 5 minutes, flip the burgers and cook for an additional 5 minutes. If using cheese, add it 2 minutes before the burgers are done.
  4. Toast the buns: Place the buns down on the right side of the grill and toast. Watch closely, they’ll toast up quickly. Remove from grill, brush with butter and place on the upper grill to keep warm.
  5. Cook patties until golden and cooked through, 10 minutes total. Serve on a bun with desired toppings.

HAMBURGER LOVE

How can you not love the simplicity of the ingredients needed to make these homemade burgers? The ground turkey is now thankfully a standard offering in most grocery stores, so finding it should be no problem. Regarding the fresh vegetables, don’t worry about the “half of” this and “quarter of” that quantity request – you can use the leftover bits for a fresh tossed salad. VEGGIE LOVE

Anything we add to a recipe is always for good reason. In the case of the vegetables in this recipe, the zucchini keeps the burgers moist. We learned this trick when we crafted our JUICY MEAT BURGERS and it really does work. The finely diced onion is added solely to flavour the turkey, and the red pepper adds both flavour and colour. These burgers aren’t just tasty, they’re juicy and look good too. Much of that is thanks to the veggies!

CHILL OUT

Plan accordingly; these no-fail turkey burgers have got to go into the fridge after you make and shape them to chill. This is really important to ensure they keep it together when you grill them. Sorry, what was that, Nik? Mix up the meat, seasoning and veggies, shape them into patties, then place them in the fridge to chill for at least an hour. Whew! Fall-apart-burger-crisis-moment averted!

INDIRECTLY

Another key moment in making PERFECT TURKEY BURGERS is the way we cook them. We specifically want them grilled on either a gas or charcoal barbecue. With our hugely popular (and also perfect) EASY GRILLED PORK CHOPS, we seared the meat over direct heat before finishing on indirect heat, but these burgers are cooked over indirect heat only. NICE BUNS

We’re going to let you decide what type of buns to use, whether classic hamburger, kaiser rolls, brioche buns or even just slices of bread. The one thing we would like you to do is place your buns on the grill to toast up a little. Oh, almost forgot, brush the toasted buns with a swipe of butter. It’s a flavour thing, trust me!

IT GETS CHEESY

If you’re so inclined, add a few slices of cheese to each burger during the final two minutes of grill time. We tried a whole bunch of different types during the testing of this recipe and although cheddar and mozzarella both worked, we ended up being blown away by the rich, nuttiness of Emmental. It is exceptionally wonderful with the turkey flavouring. Who knew?
