  1. Place cucumber, avocado, feta cheese and dill in a medium-sized bowl. Sprinkle with salt and pepper to taste and drizzle with olive oil plus half the quantity of lemon juice and lemon zest. Toss gently.
  2. Place a few lettuce leaves onto a salad or luncheon plate. Add salad onto the leaves. Squeeze additional lemon juice onto the salad followed by more salt and pepper to taste. Garnish with dill and lemon zest. Serve immediately.

Everyone’s in love with this CUCUMBER AVOCADO FETA SALAD!

I recently had family up at the cottage, and it shouldn’t come as a surprise that two Manojlovich siblings in the same room will invariably turn the conversation to food. Boy, am I ever thankful it did because this recipe for a CUCUMBER, AVOCADO and FETA SALAD was the result of it. This simple homemade salad recipe just goes to show that a healthy salad need not be complicated.

My sister explained how she and my niece Jelena like to take cucumbers, avocado, and feta cheese, toss them with lemon and dill to create a simple but fresh-tasting salad. The idea sounded simple enough, and with just a few simple considerations, we were sitting down to enjoy it in no time. I’ll explain details on some of the key things we learned making it, but the go-forward on this one: fresh and healthy is on the way!

INGREDIENTS

We always suggest using fresh, organically grown vegetables whenever possible. When making a fresh salad, this is even more important. It’s about maximizing those flavors, after all. Though some may think this is an upgrade to cucumber salads, we’re here to say this salad is so much more. Instead of the traditional garlic and red onion, we add a fresh herb. Though we use dill, mint, parsley, or basil will work too. Beyond that, have perfectly ripened avocados, fresh lemon juice, crumbled feta cheese and olive oil at the ready.

AVOCADO AND CUCUMBER

Try to make this salad with perfectly ripened avocados; the bigger the better. Be careful with how much you handle them to avoid mushiness. Next, we’re calling for crunchy cucumbers. Notice, the cucumbers are not peeled. The goal is to maximise all the nutrients, and those peels are loaded with vitamins and minerals. This cucumber avocado salad delivers both flavours and textures.

FETA CHEESE

We cubed the feta cheese for this recipe, but adding crumbled feta can work too. I suggest you taste the cheese before adding it to the salad to get a sense of the sodium level – you don’t want the result to be too salty. That said, the only seasoning we’re calling for is salt and pepper to taste.

LEMON & DILL

Much of the beauty of this salad comes from the flavour combination of fresh dill and lemon. If anything, add more than we suggest to boost the fresh taste. Additionally, if you’d like a tangier flavouring, add a tiny splash of white vinegar.

Although this salad is the perfect side dish, light lunch, or dinner, you can also serve it as a side with our GRILLED CHICKENMIXED GRILL or BARBECUED SALMON FILLET.
