This sensational salad idea came into being after we shot this BELGIAN ENDIVE APPETIZER. It was such a hit with friends and family that I picked up a few more heads of Belgian endive, determined to craft a more substantial salad recipe. We ended up with something that’s big on flavour and short on prep steps. This tasty HEALTHY ENDIVE SALAD could very well be one of our top salad recipes ever.

INGREDIENTS

Here’s a great way of remembering the various ingredients used to make this refreshing ensemble: fresh. Made with Belgian endive, radicchio, celery, apple, chives and green onions plus just the tiniest bit of sharp cheddar cheese, finding the ingredients for this salad should be a breeze. As always, we suggest you purchase locally grown, organic ingredients, if possible – you will taste the difference. Second, feel free to swap the cheddar with another favourite fromage like blue cheese, Parmesan cheese, feta or pecorino. And, how about those walnuts? If you’d like, toast them before adding them to the salad or swap them out with pecans, pine nuts or sliced almonds. This salad loves a crunch.

WHAT IS BELGIAN ENDIVE?

In a nutshell, BELGIAN ENDIVE is a leafy vegetable belonging to the genus cichorium, which includes several similar bitter-leaved vegetables including wild curly endive and chicory. Endives are rich in many vitamins and minerals, especially folate, vitamin A and vitamin K, and are also high in fibre. The flavour is often described as being pleasantly bitter and mildly nutty. Belgian endive has a tender but somewhat crisp texture that’s velvety and juicy, with a soft crunch and slight creaminess.

RADICCHIO AND BELGIAN ENDIVE

In thinking about what might pair well with this Belgian endive salad, we decided to add radicchio. Like endive, RADICCHIO is also a member of the leaf chicory family and is often used in Italian cuisine to the point where it’s sometimes referred to as Italian chicory. This leaf lettuce has purple leaves accented with white veins held tightly within the head, and it has a delightfully sharp and bitter flavour. It adds a nice hit of vibrant colour to this salad. We suggest keeping the endive and radicchio in the vegetable drawer of your fridge to maintain freshness. To use, simply peel away and discard any blemished outer endive leaves or the dry curly radicchio leaves. No need to rinse or spin these salad lettuces.

Ingredients for the dressing include seasoning rice wine vinegar, walnut oil and lemon juice plus salt and pepper.

SIMPLE SALAD DRESSING

Remember how we said at the top that we wanted to keep the prep time for this HEALTHY ENDIVE SALAD recipe to a minimum? Well, the proof’s in the pudding, or in this case, the dressing. We’re making it with what might be our easiest vinaigrette ever. Imagine a quick whisk of walnut oil, seasoned rice wine vinegar, lemon juice, kosher salt and black pepper. Wait, what? That’s it? Yup, no garlic, onion, honey or Dijon mustard in sight. One thing to mention, by all means, if you wish to change up the salad dressing, go right ahead. This salad welcomes experimentation.

LARGE SALAD BOWL

So here’s a suggestion: make the dressing, cover it and set it to the side. Then chop up all the fresh veggies, chives, walnuts and cheddar cheese, placing everything into a large bowl. Cover the salad and place it into the fridge until you’re ready to serve. Then simply add the diced apple and dressing, toss everything together and serve. For best results, this salad should be dressed and served moments before you intend to enjoy, without delay.

SERVE

There are no special instructions on serving this healthy salad recipe. The one caveat is that you can enjoy it as a starter, a side dish, or as a healthy, light meal option.
