Please don’t second guess the high oven temperature detailed in the instructions for this post. The high oven temperature accomplishes two things. First, it sears the outside of the fish so that the flesh gets soft and flakey. The high heat also cooks the sauce to a pleasant crisp. Just wait until you take your first bite. One thing to mention about service, the crispy salmon skin often sticks to the paper or foil allowing for the flesh of the fish to come away ready to be devoured.
