INGREDIENTS
As I already mentioned, this recipe doesn’t call for a plethora of ingredients, yet, the ones used are important. When selecting your salmon, look for wild B.C. salmon from the Pacific north coast, and bring your salmon to room temperature before cooking. For the marinade, the grated ginger and garlic soften when cooked, thanks to our blending them with the soy and Sriracha sauces. If you can’t find Sriracha, substitute it for garlic chili sauce. You should be able to find both in the Asian condiment section of your grocery store.
OVEN ROAST
Although the oven temperature may seem high, it accomplishes two things: it almost sears the outside of the fish so that the flesh gets soft and flakey, and it also cooks the marinade ingredients to a pleasant crisp. All quite yummy!
