Our Best Grilled Cheese Sandwich

  1. Cook the bacon: Preheat the oven to 400°F. Place the bacon onto a baking sheet fitted with a wire rack. Sprinkle with pepper, if desired. Transfer to oven and bake until crispy, approximately 15 minutes. Place onto paper towels or dab to remove grease. Chop the bacon and set it aside to cool.
  2. Assemble the filling: Place the chopped bacon into a bowl with the cheese. Toss to combine. Set aside.
  3. Heat griddle or skillet on moderate to low heat.
  4. Assemble the sandwiches: Lay the bread onto a work surface and swipe the entire surface with an even amount of butter, about ½ a tablespoon per slice. Invert the slices of bread and repeat the process using mayonnaise.
  5. Place a generous mound of the cheese and bacon mixture onto four of the bread slices. Spread it out to an even thickness. Place the top piece of bread, butter side up, onto the cheese mixture.
  6. Grill the sandwiches: Place the sandwich in the skillet. Grill for about 1½ minutes before lifting the edge to check doneness. Press the sandwich down into the pan gently and grill until crisp and golden, about an additional 1½ minutes. Flip and repeat the process on the other side, grilling the sandwich until it’s crisp and golden.
  7. Remove from heat, cut in half and serve immediately with ketchup.

Best Grilled Cheese Sandwich

The crispy first bite, then stringy, gooey cheese and a surprise within – this is absolutely OUR BEST GRILLED CHEESE SANDWICH ever!

Not sure if this has been the case for you lately, but many of my meals are happening pretty much by chance. I head to the fridge, take stock and pull something together with whatever I find. Such was the case a few weeks ago when I grabbed some cheese, bread and a few rashers of leftover bacon. Little did I know that this would be the humble beginnings of OUR BEST GRILLED CHEESE SANDWICH.

If sandwiches are your thing, you’ve come to the right place because we love them. They’re an especially handy menu option up here in cottage country since they work for any meal. Whether you have a taste for a GREEK BREAKFAST WRAP or a HAM AND CHEESE BREAKFAST SAMMIE, don’t forget this really delicious GRILLED PANINI too!

Before I detail a few tasting notes about this grilled cheese, let me just say, it’s tried and oh, so true. It went through five different versions before the final test, where we knew that this was it. The results are top notch and we’re pretty proud.

SIMPLE PLAN

As I mentioned earlier, it all started with a simple plan: make a grilled cheese. That said, the seven ingredients you’re going to need are equally simple to get. Of course, the quality of those ingredients will impact the final taste, so use organic ingredients if you can find them. I also think thick sliced white bread, whether Italian or Brioche, works best. 

We used three cheeses; cheddar, Gruyère and Parmesan.

TRIPLE THREAT

The absolute deliciousness for this sandwich comes from the use of three choice cheeses – cheddar that gets creamy when it melts, a nutty Gruyère that adds stringiness and Parmesan to give it a perfect saltiness. Make sure to mix them up thoroughly before adding them onto the bread.

Butter and mayonnaise make this sandwich extra creamy.

DYNAMIC DUO

There are two “dynamic duo” ingredients in this recipe – butter and mayonnaise. The butter gets the bread perfectly crispy and golden as the sandwiches grill in the pan. Then, the mayonnaise, swiped onto the inside of the bread slices, adds both flavour and creaminess with the melted cheese. I simply refuse to make grilled cheese without them.

SURPRISE!

In the VIDEO attached to this story I mention that the addition of cooked and finely chopped bacon is optional. Truth is, I only said optional as to not offend vegetarians and those with dietary restrictions. For everyone else, add the bacon; it’s the ultimate add-on and wow, is it ever delicious!

INTO THE FUTURE

It’s always nice when an unexpectedly good thing happens mid-story. In this case, I went to clean up after the shoot and lo and behold, I had forgotten to grill one sandwich. I wrapped it in cheese paper, waited two days, then grilled it like the others. I’m happy to report that it tasted just as good, so feel free to make the sandwiches in advance. This timesaver really works!

NOT SO HOT

The one thing we can’t stress enough is how it’s best to grill the sandwiches on moderate to low heat. Although grilling them this way will take longer, about 5 to 6 minutes per sandwich, the results are literally golden. This longer, slower cook time also allows the cheese to melt within. Another tip is to make sure your skillet or griddle is heated before you add the sandwich. This also ensures a consistent and even grilling.
