Grilled Panini Sandwich

Looking for a delicious filling for a GRILLED PANINI SANDWICH? Here’s a favourite, along with ideas for more. Now let’s get grilling!

Sandwiches have long been my go-to when I’m pressed for time. As long as there’s some sort of bread within reach, I’m game to hunt through the cupboard or fridge and gather a bunch of ingredients to create a fabulous sandwich.

My enjoyment of homemade sandwiches increased significantly when friends gifted us with a panini maker. I suddenly realized I could make exceptionally delicious creations that have a signature crispy outside with each bite, followed by the warmed inside finish.

If you don’t have a panini maker, fear not; you can make these creations in a skillet on the stove top. If you’re so inclined to purchase one, I’ve listed a bunch of panini makers that I’ve tested and had great results with in the Amazon links below.

On to my favourite GRILLED PANINI SANDWICH combinations:

NIK’S FAVOURITE – As featured in this story! Stonemill’s Sprouted 3-Grain bread, Edam cheese, sliced turkey, tomato, avocado, alfalfa sprouts and a pesto mayonnaise. Butter the outside of the bread to heighten the flavour of the crispy grilled bread.

CAPRESE – A 6-inch square of Italian focaccia bread sliced in half. Brush the insides with herbed oil, then add a layer of thin-sliced tomato, buffala mozzarella, fresh basil leaves and baby arugula tossed in olive oil and balsamic vinegar. Finish with salt and pepper and grill until the outside is crunchy.

FRENCH TWIST – A 7-inch piece of French baguette cut in half. Butter the halves before spreading with a Pommery whole-grain mustard. Thin slices of country pâté, slices of fresh apricot and a light sprinkling of sautéed shallots. Compress the sandwich down while grilling and serve with cornichons and pickled onions.

PBBAJ CLUB – Using your favourite sliced or artisanal bread, butter the outside and sprinkle with cinnamon and sugar. Spread some peanut butter and jam on the flip side of each. Add sliced banana on one piece and sliced apple on the other. Put an additional piece of bread between the two when you close it up and grill that club – the outside should caramelize a bit!

Ingredients & Amounts

  • For Nik's Favourite:
  • 2 slices of Stonemill Sprouted 3-Grain bread
  • 1 tablespoon of butter
  • 2 slices of Edam cheese
  • 3 slices of sliced turkey
  • 1 slice of tomato
  • handful of alfalfa sprouts
  • ½ of an avocado, sliced
  • 1 teaspoon of mayonnaise
  • 1 teaspoon of pesto
  • salt and pepper


  1. Turn on panini maker, or heat skillet to medium-high.
  2. Place pesto and mayonnaise into a small bowl and stir together.
  3. Lay slices of bread on a piece of parchment paper and lightly butter one side of each. Flip bread over.
  4. On the first slice, add in order: one slice of cheese, turkey, tomato, salt and pepper, alfalfa, avocado and the second slice of cheese. Spread the pesto mayonnaise onto the second slice of bread.
  5. Close the sandwich up, place on the panini maker or skillet, and grill for 5 minutes. If using a skillet, flip the sandwich over at the 3 minute mark and grill for an additional 2 minutes.
  6. Cut in half and serve immediately. Garnish with a pickle.
