Ingredients

Directions

  1. Prepare skillet: Drizzle 9-inch cast iron skillet with oil and rub surface to distribute evenly.
  2. Prepare rolls: On a lightly floured surface, roll dough out into a 16 x 10-inch rectangle. 
  3. Brush with pizza sauce to within ½-inch of the edges.
  4. Sprinkle with pepperoni, green pepper, chili flakes, oregano, grated cheeses and basil.
  5. Roll up jelly roll-style, starting with a long side. Pinch ends and seam side to seal.
  6. Cut into 8 1½-inch slices. 
  7. Place slices into skillet and cover with a clean dishtowel. Leave in warm location to rise for 30 minutes. While rolls are proofing, preheat oven to 400°F.
  8. Transfer skillet to oven and bake for 20 minutes.
  9. Prepare topping: Stir garlic salt with melted butter. 
  10. Remove skillet from oven, brush top with melted butter and sprinkle with Parmesan and mozzarella. Return skillet to oven and bake until golden, an additional 5-10 minutes.
  11. Cool for 5 minutes. Sprinkle with chopped parsley and serve immediately.

This innovative way of making pizza uses readily available ingredients. It’s all really simple.

SIMPLE STUFF

From the outset, we promised to keep this simple. In our minds, we envision you using store-bought pizza dough, although homemade pizza dough works well too. Then it’s as easy as opening a can of sauce, picking up a package of sliced pepperoni, and adding cheese. This recipe also invites you to make it your own. Try using bacon, ham, sausage, and vegetables, as well as a variety of cheese, olives, mushrooms, and sauces. The sky is the limit!

TWO KINDS OF CHEESE

When you watch the VIDEO created for this recipe, you’ll notice how I grate the mozzarella and Parmesan. I always have chunks of these two favourites on hand; I eat them a lot. But by all means, if you’re the type to use packaged shredded cheese, have at it. My only request is that you make the recipe the first time with Parmesan and mozzarella – a classic flavour combo. After that, start experimenting. Every type and combination of cheese will work.

PIZZA SHEET

Remember how I said this is an easy recipe? Basically, you’ll be crafting an extra-large pizza about the size of a baking sheet. The instructions are completely straightforward; roll out the dough, add sauce, toppings, and cheese. Seriously, it’s exceptionally easy.

Make sure to squeeze the dough together along the seam and at both ends.

ROLL UP

Here’s where the reference to our ULTIMATE GOOEY CINNAMON BUNS comes in. Don’t worry, we won’t be adding cinnamon, melted butter, or brown sugar, but we will have you roll up the sheet of pizza similar to the way we made those legendary buns. Remember to go slow, the goal being to tuck all of the pizza toppings into the roll before cutting it into 8 1½-inch slices.

SKILLET WORKS

I decided to bake the pizza pinwheels in a heavy CAST IRON SKILLET because I love how this essential cooking utensil performs. Just like with our SKILLET CORNBREAD, a skillet cooks the pizza rolls evenly. One important mention is to allow the recommended 30 minutes for the rolls to proof before transferring them to the oven for the first bake.

BAKE OFF

The baking of these EASY SKILLET PIZZA ROLLS happens in two stages. In the first bake, the rolls swell up and bulge in the skillet, and the tops get beautifully golden brown. Oh, and another thing, those using pepperoni will notice it getting all crispy while the cheese starts bubbling up and melting. Honestly, you can’t make this up!

TOP IT OFF

OK, I’ll admit it, the second baking step happened completely by accident. There I was checking on the pizza rolls after 20 minutes and instantly thought “more cheese!”. But then I remembered the cinnamon buns and thought, “you brushed those with sugared melted butter”. For this application, how about a swipe of garlic-flavoured butter and a sprinkle of more Parmesan and Mozzarella. It’s all quite fab!
