  1. Cure brisket: Mix SPICE RUB and brown sugar together in a small bowl. Sprinkle over beef brisket and rubbing it into the meat. Wrap with Saran and refrigerate overnight, ideally between 8 and 12 hours.
  2. Cook brisket: Stir soup mix together with water and pour into slow cooker. Unwrap brisket and brush with ¼ cup WATC BBQ SAUCE. Transfer brisket to slow cooker, cover and cook on low heat for 8 hours. Turn slow cooker off and leave beef covered in crock to cool for 30 minutes.
  3. Pull beef: Transfer cooked beef to a platter or tray. Using two forks, gently pull beef apart, transferring it into a large bowl. Add 1 cup of WATC BBQ sauce and stir to combine. Add more sauce to taste.
  4. To serve: Place a mound of pulled beef onto the bottom of hamburger or kaiser buns, add a slice of Swiss cheese, then bun top.
  5. Serve with chips, pickles, coleslaw or a favourite salad.

BEEF BRISKET

Beef brisket is listed as one of the nine “primal cuts of beef” and is from the breast or lower chest of the cow. Go HERE to learn more about brisket and other cuts of beef. Briskets can be cooked in many ways, including baking, boiling, smoking, and roasting. Cooking brisket using a slow cooker, as we did for this post, results in a very tender brisket. You can also use an InstaPot or Dutch oven for this recipe and prepare the meat the same way.

SPICE BLEND

We seasoned the brisket with a dry rub of our BUTCHER’S BLEND spice mix and a bit of dark brown sugar. Our spice blend contains garlic powder, smoked paprika, chili powder, coriander, and onion powder. It also contains salt, black pepper, allspice, cumin, and zested orange peel. The combination, along with the brown sugar, gives the beef such a pleasing flavor.

For best results, cure the beef for at least 8 hours if not longer.

CURE

Promise you won’t skip our direction to rub the meat with the spice and sugar blend and leave it wrapped in the refrigerator to cure for at least eight hours. Doing so ensures the beef soaks up all the salt, spices and seasonings.

SLOW COOKER

As mentioned, we chose the easiest route by preparing the meat for this post using a slow cooker or crockpot. Simply pour the water and onion soup mix into the slow cooker, add the seasoned piece of meat, cover and cook slowly on low for eight hours. Could this be any easier? We think not!

TENDER BEEF

Once the beef is cooked, leave it to rest in the juices for 30 minutes. This gives the meat ample time to soak up some of the braising liquid in the pot. This rest period also lets the meat relax and settle. Although you could slice and serve the cooked chopped brisket along with MASHED POTATOES and a favourite VEGETABLE SIDE DISH, we encourage you to proceed with the “pulled beef” portion of the program.

To pull the brisket, transfer it to a large platter or rimmed tray and gently pull the beef apart using two forks. Once the meat is completely pulled, transfer it to a large bowl and continue with the final steps.

SANDWICHES

Raise your right hand and say, “I promise not to make serving these sandwiches complicated.” We’re talking hamburger or brioche buns, sauced-up beef brisket, and a slice of Swiss cheese. Seriously folks, that’s it. The only other things to serve with it, and this is up to you, are potato chips or crispy corn chips, a crunchy slaw,  potato salad or baked beans, and to top it off, our famous GARLIC DILL PICKLES. Some people may ask for a tiny bit more BBQ SAUCE to go with, so just saying, you might want to leave that bottle on the table.
