INGREDIENTS
Just like every classic shortbread recipe, this one begins with flour and butter. We then build a savoury flavour profile by incorporating paprika, chili flakes, kosher salt and chives. All of these ingredients, along with the blue cheese and pecans, contribute to the memorable flavour of these buttery shortbread wafers.
NUTS AND CHEESE
These two ingredients get their own special mention because they add so much to the recipe. The blue cheese gives the shortbreads their cheesiness while also working together with the butter to keep the texture soft and creamy. The pecans pair well with the cheese and also add their own nuttiness to give the finished shortbreads a unique, memorable flavour.
LOG ROLL
No need for fancy food processors or stand mixers in this recipe – we’re doing everything by hand. After bringing the dough together, you’ll be dividing it into two portions and rolling it into a long log shape. Using parchment paper for this process makes it a cinch. Although you may be tempted to roll, cut and bake straight away, don’t. Chill your dough logs for an hour for best results.
CUT AND BAKE
Cutting the logs into individual circles is easy and we love how they hold their shape. Because every oven is different, we suggest keeping a close watch the first time you make them. You want a golden edge but not brown.

The first time I made this recipe, I ate them as is. We were testing the recipe and before I knew it, they were pretty much gone. Since then I’ve learned a few things, the first being to pace myself, LOL! They’re highly addictive.
Second thing is about getting creative.
