An easy chop, a quick toss, and some seasoning along with a squeeze of lime – this FRESH TOMATO AND AVOCADO SALAD is fantastic!

No two ways about it, adding more fresh fruits and vegetables to our diet is such a good idea. Not only are they loaded with essential nutrients, but they also help boost our immune system.

With this salad, not only does your body get a healthy dose of fruits and veggies, but it’s also a treat for the eyes; this salad is arrestingly beautiful. It has often been said that when it comes to our enjoyment of food, the eyes eat first. With that in mind, we’re saying the FRESH TOMATO AND AVOCADO SALAD has it all: healthy, delicious and gorgeous.

Ingredients for Tomato Avocado Salad

Everything about this salad is fresh, making it especially perfect for warm weather months when local fruits, vegetables and herbs are in season. We often suggest you purchase locally grown organic ingredients whenever possible. They somehow just taste better!

This salad gives tomatoes some much deserved love! They’re the only fruit used in this salad, giving it tons of flavour with a tiny hint of sweetness. You can use cherry tomatoes as I did or swap them out for field or beefsteak varieties, chopping them into bite-sized chunks.


Avocados halved and cut into chunks

OH, AVOCADO!

Avocados are just so darn delicious with their buttery, almost melt-in-your-mouth texture. They’re also loaded with potassium, as well as vitamins B and C. Now, in a perfect world, you’re going to make this salad using perfectly ripened avocados cut into bite-sized chunks. Overly ripened ones make the salad go soft, while under-ripened ones taste a bit chalky. Fingers crossed for ripe!

ALL TOGETHER

Prepping the ingredients for this salad is meant to be quick and easy – don’t overthink it. Just chop, slice and dice, then place everything into a bowl. Go with your gut when you dress the salad: a little drizzle of oil, seasoning, lime juice, the whole thing couldn’t be any easier. When you go to toss, do so gingerly and just until everything is mixed.

One final option for this salad is to dress it with our CREAMY BUTTERMILK DRESSING. It’s quite rich, so use it sparingly, but it works perfectly with these chopped ingredients.

Ingredients & Amounts

  • For the salad:
  • 2 cups of cherry tomatoes, quartered
  • 3 avocados, peeled and cut into chunks
  • 2 yellow peppers, seeded, cut into chunks
  • 2-3 green onions, cut down the middle then chopped
  • ¼ of a red onion, diced
  • 1 clove of garlic, finely diced
  • 1 tablespoon of chopped fresh dill
  • 1 tablespoon of chopped fresh parsley
  • To dress:
  • 2 tablespoons of extra virgin olive oil
  • sprinkle of kosher salt
  • sprinkle of black pepper
  • juice of a lime

Instructions

  1. Prepare all of the ingredients and place them into a large bowl.
  2. Drizzle with olive oil and sprinkle with salt and pepper. Squeeze on the lime juice. Toss gingerly to combine. Serve immediately.
