THICK-SLICED BACON
Bacon is a type of salt-cured pork made from various cuts, typically the belly or less fatty parts of the back. For this recipe, we suggest using pork belly strips, referred to in Canada and the U.S. as “side bacon” or “streaky bacon”. That said, this technique will also work with other types of bacon. Try it with back bacon, a leaner kind of bacon cut from the loin that is popular in the U.K. and Ireland; collar bacon, cut from the back of the pig’s head; or cottage bacon, a lean cut from a boneless pork shoulder. No matter which you use, make sure it’s thick-sliced so the bacon cooks evenly and crisps up without burnt edges.
SHEET PAN
As mentioned off the top, cooking bacon in the oven is much cleaner than the traditional stovetop method; no splattering, thus less mess. All you’ll need for this recipe is a sheet pan or rimmed baking sheet to arrange the bacon slices in a single layer, ensuring they cook evenly.
