  1. Preheat oven to 400°F. Line a large baking tray with parchment paper.
  2. Place bacon onto parchment, laying rashers side by side in a uniform manner.
  3. Transfer to oven and bake for 10 minutes.
  4. Remove tray from oven. Using tongs, carefully flip rashers over. Drain away excess bacon grease. Sprinkle bacon with black pepper and blue cheese. Return to oven and bake until crispy, about 8 minutes. Add a couple minutes more to adjust to your desired level of crispiness.  Total time between 18 - 20 minutes.
  5. Remove from oven. Transfer bacon with tongs to a paper towel-lined plate to drain excess fat. Transfer to plate or platter and serve immediately.

Let’s hear it for a three-ingredient recipe – love that! We suggest having extra quantities of the bacon and blue cheese on hand. Why? Because this recipe is so easy and so delicious, your weekend guests will be requesting more, guaranteed. Best to be ready in case a big batch is in order!

THICK-SLICED BACON

Bacon is a type of salt-cured pork made from various cuts, typically the belly or less fatty parts of the back. For this recipe, we suggest using pork belly strips, referred to in Canada and the U.S. as “side bacon” or “streaky bacon”. That said, this technique will also work with other types of bacon. Try it with back bacon, a leaner kind of bacon cut from the loin that is popular in the U.K. and Ireland; collar bacon, cut from the back of the pig’s head; or cottage bacon, a lean cut from a boneless pork shoulder. No matter which you use, make sure it’s thick-sliced so the bacon cooks evenly and crisps up without burnt edges.

SHEET PAN

As mentioned off the top, cooking bacon in the oven is much cleaner than the traditional stovetop method; no splattering, thus less mess. All you’ll need for this recipe is a sheet pan or rimmed baking sheet to arrange the bacon slices in a single layer, ensuring they cook evenly. 

In our VIDEO for this recipe, we instruct you to line the sheet pan with parchment paper to reduce the browned bits clinging to the pan. You can also use aluminium foil if you’re looking for a quick clean-up. Just place wire racks on a foil-lined baking sheet and it’ll work perfectly.

BLUE CHEESE & BLACK PEPPER

To make things easier, we suggest you follow our lead and purchase the blue cheese already crumbled. Look for containers of crumbled blue cheese in the dairy section of your local grocery store. Also, before adding the cheese, please remember to use tongs to turn the bacon over, – that grease is HOT!

Now, experience tells me not everyone loves blue cheese (makes me sad, but there you have it) so feel free to try the recipe with a light sprinkle of aged cheddar cheese, Monterey Jack or Parmesan. Last thing, sprinkling the cheesy, crispy bacon with the fragrant, spicy kick of freshly ground black pepper is sensational. Do not forget this step.
