The key thing that makes this sauce so perfect with beef, lamb, pork and even chicken is the horseradish. We suggest you look for a kick-ass (pardon my French) variety. If it’s labeled as extra hot or if it’s so wonderfully pungent that it makes your eyes water, then it’s the one to use. A robust horseradish softened with sour cream really does work best.
SERVE
