This HEALTHY FRUIT SALAD is loaded with fresh flavours like cherry, mint, lime, and orange. Here’s to healthy tasting great!

This fresh fruit salad can be made with whatever you have on hand. One friend says this is her go-to fruit salad for weight loss while another says the preparation is his favourite way of making a fruit salad. For us, it’s all about the Mojito sauce giving it the perfect flavour.

CHERRIESHealthy Fruit Salad

 

Fresh locally grown cherries, when in season, are always preferred for a recipe such as this, but if you’re creating it off-season, use imported cherries or even frozen; both will still do the trick.

 

 

 

 

ORANGE JUICEHealthy Fruit Salad

We’ve tried this recipe using a number of different liquids to create the sauce with which we macerate the mint leaves. Freshly squeezed orange juice gets top marks for the way it coaxes out the flavour of both the cherries and the mint. Juicing two large navel oranges will give you the ½ cup quantity needed for this recipe.

 

  

 

LIMES & MINTHealthy Fruit Salad

Truth – sometimes limes can disappoint. You go to cut a lime in half only to realize they’re duds and the pulp is dry as a chip. I always give limes a little squeeze in the store, looking for ones that are a bit pliable, meaning the peel and pith are thin and the pulp is juicy, which is key to this recipe.BLAH

Use finely chopped mint leaves in your sauce for best results; using mint stalks or stems can make it bitter. You can also experiment with different types of mint like spearmint, peppermint, apple mint, chocolate mint – all are super refreshing.

This HEALTHY FRUIT SALAD with Mojito sauce is the perfect fresh fruit cocktail.

Ingredients & Amounts

  • 6 cups of chopped fresh fruit, tossed
  • For the Mojito sauce:
  • ½ cup of orange juice, freshly squeezed
  • ¼ cup brown sugar, firmly packed
  • 1 cup of fresh cherries, pitted and halved
  • 1 lime, juiced
  • ½ cup of fresh mint leaves, finely chopped

Instructions

  1. Heat the orange juice in a small pot on medium-high heat. As soon as it boils, reduce heat to medium and add the sugar, stirring until it dissolves. Add the cherries, reduce to a simmer and cook for about 5 minutes. Remove from heat and allow to cool.
  2. Prepare the chopped fresh fruit, toss and set aside.
  3. Purée the cooled cherry mixture with a blender or immersion blender. Add the mint and macerate using a glass or wooden muddler. Add the lime juice and stir.
  4. Pour sauce over fruit, toss and serve.
