Everything about this salad is fresh, making it especially perfect for warm weather months when local fruits, vegetables and herbs are in season. We often suggest you purchase locally grown organic ingredients whenever possible. They somehow just taste better!

This salad gives tomatoes some much deserved love! They’re the only fruit used in this salad, giving it tons of flavour with a tiny hint of sweetness. You can use cherry tomatoes as I did or swap them out for field or beefsteak varieties, chopping them into bite-sized chunks.

OH, AVOCADO!

Avocados are just so darn delicious with their buttery, almost melt-in-your-mouth texture. They’re also loaded with potassium, as well as vitamins B and C. Now, in a perfect world, you’re going to make this salad using perfectly ripened avocados cut into bite-sized chunks. Overly ripened ones make the salad go soft, while under-ripened ones taste a bit chalky. Fingers crossed for ripe!

Prepping the ingredients for this salad is meant to be quick and easy – don’t overthink it. Just chop, slice and dice, then place everything into a bowl. Go with your gut when you dress the salad: a little drizzle of oil, seasoning, lime juice, the whole thing couldn’t be any easier. When you go to toss, do so gingerly and just until everything is mixed.

  • For the salad:
  • 2 cups cherry tomatoes, quartered
  • 3 avocados, peeled and cut into chunks
  • 2 yellow peppers, seeded, cut into chunks
  • 2-3 green onions, cut down the middle then chopped
  • ¼ of a red onion, diced
  • 1 garlic clove, finely diced
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
