Up in our neck of the woods, it’s ONTARIO ASPARAGUS, known for its tender, thin shoots and fresh, grassy flavour. Prepping the asparagus spears is easy – give the stalks a rinse under cool water, then trim away the very ends, which are sometimes woody. You can use the castoffs, along with other vegetable trimmings, to make a vegetable stock. Some folks like to peel their asparagus, but… why? No need to lose any of that wholesome goodness!
Speaking of wholesome goodness, asparagus delivers. Health experts agree that asparagus may improve digestive health, reduce blood sugar levels, and also may reduce cholesterol. This beloved vegetable has an impressive list of vitamins and minerals, including vitamins A, C and K, plus folate, potassium and phosphorus. It’s also low on fat and high on fibre. LOVE!
HOW TO GRILL ASPARAGUS
Even the technique for how to properly grill asparagus is easy. After rinsing and trimming the stalks, lay them onto a baking tray, drizzle with regular or extra virgin olive oil and rub to coat. Preheat the grill to 500°F, then add the asparagus, spreading it out in a thin layer across the grill grates. Leave the spears to cook for a minute or two, then move them on the grates to help blister and char the skin, leaving each spear with those choice grill marks. You’re going to want to cook them until fork-tender but still kinda crunchy. Pro tip: add a halved lemon to the grill, too. A squeeze of lemon juice on the finished dish is fab.

Making it only takes a few moments, and you can make this crumb topping before or after you grill the asparagus. I usually make it as soon as the asparagus comes off the grill. It’s excellent sprinkled onto the dish when still warm.
Sautéing the panko bread crumbs in a skillet or pan set on medium-high heat is a dream. Melt some butter and flavour it with garlic. For best results, let the garlic sizzle in the butter for about a minute to impart those big garlic flavours. Then add the panko, regular or gluten-free, and toss it about in the hot skillet or pan to toast. We also added chopped parsley into the crumb, adding another layer of flavour plus some colour. Feel free to add other fresh herbs to this topping like chives, dill, fresh basil and mint. We know some might wonder about cheese, whether it’s Parmesan cheese, Asiago or feta. We opted instead to keep the flavour of the asparagus front and centre.
