The ingredients for this recipe represent a pleasing mash-up of summertime favourites. We know you’ll have no problem sourcing them at your local grocery store or supermarket, but why stop there? Sometimes half the fun of preparing a new recipe is in the joy of making it. Head out for a stroll to a local farmers market and look for them there. We always say, the fresher the produce, the better the flavour.

FRESH PEACHES

In a perfect world, you’ll make this recipe for the first time using those glorious handpicked fresh, ripe peaches. For best results, rinse the peaches and dice or chop them up moments before you assemble. Sweet but tangy peaches work best, so look for varieties like EMPRESS, EL DORADO, RED HAVEN and GOLD DUST. VEGETABLES AND HERBS

We loved adding a pleasing blend of fresh vegetables with the diced peaches.
