  1. Place the butter into the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until light and creamy, about 1-2 minutes.
  2. Sift together sugar and cocoa powder. Add it to the butter along with the milk and vanilla. Beat on low for 1 minute.
  3. Add the salt and beat on high for 1 additional minute.
  4. TIP: Add 1/4 cup of icing sugar for a creamier frosting or thin the icing out by adding more milk, 1 tablespoon at a time.
  5. Use immediately or refrigerate for up to 1 week. If using refrigerated, bring to room temperature then whip up again before use.

THE SIX

If there was a contest for the top ingredients that belong together, these six might win. That’s right friends, you can make this frosting using just six readily available ingredients. Two things to note: we made this recipe using unsalted butter, as we do with all recipes on this site, and used cocoa powder.

Don’t confuse it with “instant cocoa mix” which is a sweetened product used to make hot chocolate. Cocoa powder is a richly flavoured extract from cocoa beans. Head HERE to read the Wiki article about it.

Unsalted butter at room temperature

BUTTER

Speaking from experience, save yourself the hassle and only make this recipe with butter that’s resting at room temperature. I usually bring the butter out of the fridge at least six hours before making this frosting. It whips up quickly and easily, eliminating the guessing game of, “Is it soft and fluffy enough yet?”

SIFT WORK

I have a very clear memory of being a tiny tyke corralled into helping my mom bake. Fetching baking trays, bundt and cake pans was often a good task, as was measuring dry ingredients. One thing that has stayed with me all these years was sifting, where my mom had me running dry ingredients through a sifter to remove lumps and combine ingredients together evenly.

Sifting the icing (confectioners’) sugar and cocoa powder together is an important step when making this frosting recipe. It eliminates lumps and ensures the finished confection is an even, creamy frosting.
