Chicken Piccata Sheet Pan Dinner

Ingredients

Directions

  1. Preheat oven to 425°F with rack in the middle position.
  2. Cut chicken into 1-inch chunks and place into a medium-sized bowl.
  3. Prepare the marinade: Place all of the ingredients for the marinade in a small bowl and whisk together.
  4. Pour marinade over chicken. Add the quartered lemon slices and toss everything together. Pour chicken mixture onto baking sheet, spreading it out evenly. Transfer to oven and bake for 20 minutes.
  5. Prepare vegetables: Place tomatoes and green beans in a bowl. Drizzle with olive oil and sprinkle with salt. Toss to coat and combine.
  6. Once the chicken has baked for 20 minutes, remove from oven and place on your work surface.
  7. Pour vegetable mixture over the chicken. Sprinkle pan with capers, thyme, garlic and lemon zest. Toss everything together and spread it out evenly on the sheet pan.
  8. Transfer back to oven. Increase oven setting to broil and bake for an additional 10 minutes, or until chicken is browned and tomatoes have blistered.
  9. Serve immediately, spooning pan juices over dish.
  10. Suggested side: steamed white, brown or basmati rice.

One look at the photo of the ingredients you’ll need and it’s obvious that we’re thinking fresh! We’re so pleased with the way this mélange of fresh veggies, herbs and citrus worked some serious magic with the light and dark chicken meat. When sourcing your ingredients, try to purchase locally grown organics as they are more flavourful. You will taste a difference when you use them.

CHICKEN TOSS

Tossing the chicken with butter, pieces of lemon and our secret ingredient, white balsamic vinegar is easy. That said, a few of the friends who signed up for the online cooking class mentioned they had difficulty finding it. Although available online (link to purchase below), feel free to swap the white balsamic for regular balsamic. It’s a little less sweet but will still work perfectly in this recipe. Another optional trick is to add a little chicken broth in your marinade if you like a lot of sauce.

COLOURFUL VEGGIES

In crafting this recipe, we were faced with having to choose what vegetables might work best with this method of preparation. We could have used cauliflower, broccoli, asparagus, peppers plus a number of other delicious and healthy options, but in the end cherry tomatoes and beans were it. We’re so pleased with the results. The tomatoes get blistered and juicy while the beans stay crunchy but add that striking colour and flavour.

If you’re reading the instructions thinking “That’s a lot of garlic, Nik!”, I have one thing that comes to mind, “It’s barely enough!” Lol! This recipe is all about those enhancements – add more with confidence.

Serving this meal only works if you keep everything else simple. Carol and I are split between steamed white or brown rice and a simple pasta or noodle dish on the side. Having a nice chilled Pinot Grigio at the ready, if you’re so inclined, will work really well too.

  • sprinkle each of chili flakes, kosher salt and black pepper

  • 2 cups cherry tomatoes, halved
  • 2 cups green beans, ends trimmed
  • drizzle of extra virgin olive oil
  • sprinkle of kosher salt

  • 6 sprigs fresh thyme
  • 4 garlic cloves, finely chopped
  • zest of 1 lemon
  • sea salt flakes and black pepper to taste
