Juicy BUTTER CHICKEN BURGERS served on warm naan bread with a slice of ripe tomato and homemade RAITA. It’s an Indian summer treat.

I was recently shown how to make traditional butter chicken, a mainstay of Indian cuisine. I’ve always loved Indian food and started thinking about ways to partner these flavours with western dishes. I think the essence of this famous dish is captured in these delicious burgers.

GROUND CHICKEN – I like creating burgers using poultry. Speak to your butcher and ask for their leanest ground chicken option.

SPICES – Two of the spices used in this recipe should be available at your local supermarket or specialty store: garam masala, a blend of Indian spices, and curry powder. You’ll also need kasoori methi, which is dried fenugreek leaves. This essential ingredient can be purchased at Indian grocers or online.

VEGETABLES, CILANTRO AND TOMATO PASTE – Shredded zucchini, sautéed sweet onion, chopped cilantro and tomato paste are all essential to the dynamite flavour, as well as garlic and ginger – trust me!

BREADCRUMBS AND EGG – These two ingredients act as binding agents and ensure that the burgers stay together on the grill.

NAAN BREAD – I went crazy when I saw individual naan breads available at my local supermarket. Warm them, before using, to replace a traditional hamburger bun.

Who knew a new twist on a summer staple could taste so amazing? Wait until you try a BUTTER CHICKEN BURGER – you’re going to love it.

Ingredients & Amounts

  • 3 pounds of ground chicken
  • 1 zucchini, shredded
  • ½ a sweet white onion, sautéed
  • 1 tablespoon of garlic, fine-chopped
  • 1 tablespoon of fresh ginger, grated
  • ½ cup of fresh cilantro, fine-chopped
  • 1 can of tomato paste
  • 1 tablespoon each of garam masala and curry powder
  • 1 tablespoon of kasoori methi (dried fenugreek leaves)
  • 1 cup of breadcrumbs
  • 2 eggs
  • 2 tablespoons of butter to sauté onions
  • For Service: warmed naan bread, sliced tomatoes and raita

Instructions

  1. Warm a knob of butter in a small saucepan over medium heat. Add chopped onion and sauté until soft and lightly browned. Remove from heat and cool completely.
  2. Place all of the ingredients for the butter chicken burgers into a medium-sized bowl. Mix the ingredients thoroughly using your hands. Form into eight burgers, cover and refrigerate for one hour.
  3. Preheat barbecue to high, about 500°F. Place burgers onto hot grill and cook for about 5-6 minutes per side, or until centers are completely cooked.
  4. Transfer cooked burgers to warmed naan bread and serve with slices of tomato and raita.
