Happy New Year, friends!

Health, happiness and all good things for the next 365 days and for many years to come. As I sat down to write this newsletter, I started thinking, 2020?! There must be something auspicious and special about it, right?

The nice thing about the start of the new year is that we just don’t know what lies ahead. Yet, with just the smallest, faintest glimmer of hope, I’m predicting great and wonderful things.

We’re thinking the following will set the tone for a bright and happy new year.

Carol and I are hard at work going through every aspect of Weekend at the Cottage. From the website, our dedicated YouTube Channel, the social media platforms, guest appearances, and our upcoming media trips, we’re setting up 2020 to be our best year ever. Always good to embark on a glow up!

That said, we’d love some help in the form of a little feedback. We’re looking for faithful readers to participate in a short survey. Nothing complicated and absolutely no skill-testing questions; it’s more about things you enjoy about our brand, areas where you think we can improve and suggestions or ideas for future stories and platform opportunities.

January 2020 Newsletter Thai Shrimp Curry

Back in July of last year, Carol and I set aside an entire afternoon where we laid out our editorial calendar for 2020. At the time I remember thinking; “This is crazy! One second I’m in the lake, and the next I’m planning the content for Holiday 2020?”

I’m so thankful we took that time because here we are now ready to roll out our easiest, tastiest recipes, our most thirst-quenching drinks and some extra-special entertaining ideas. We’re here to make every day feel like it’s the weekend.

Wait until you try our MEATBALLS IN MARINARA SAUCE, our ready-in-15-minutes RED THAI CURRY SHRIMP and our CLASSIC COBB SALAD. This summer will feature a BLUEBERRY CRUMB CAKE that’s perfect to bring to the cottage. How about GRILLED CHICKEN GYROS SAMMIES, or a glorious PEACH JAM RECIPE? You’ll raise your glass to FIZZY SUMMER COCKTAILS, too! For fall, how about a MODERN THANKSGIVING TABLE, bright and beautiful SUCCOTASH and crispy, crunchy GINGERSNAPS.

Lastly, what did Nik and Carol put on their wish list for Holiday 2020? We’re so excited, we can hardly stand it! There’s something for everyone, whether you have a taste for the best-ever mile-high APPLE PIE, or comfort food defined in a superior SHRIMP CREOLE. And mark your calendars for Tuesday, December 1 – it’s the culinary battle of how to make perfect BEEF WELLINGTON! All this and so much more to come. 2020, bring it!


January 2020 Newsletter Cobb Salad

As we look back on 2019 and bid it a fond farewell, we can’t help but say a profound thank you to everyone who contributed to our success. Of course, that includes all of you who inspire us to create our unique kind of deliciousness. Thanks too to the talented, dedicated, forever-helpful members of our team. We also want to send a shout out to all of the guests who shared their wonderful tips and recipes with us at the cottage. Also, big hugs to our fellow food and beverage content producers and media folks across the country.

Lastly, and this one was especially evident in our content this past year, thank you to our local farmers, growers and organic food and drink producers. Everyone knows our belief that good food tastes even better whenever it’s made using quality ingredients. There must have been something in the water (and soil, and air) in 2019 – everything we made tasted divine and it’s all thanks to our locals. Remember that as a go-forward in the new year – let’s all continue to support these hard-working and dedicated local producers and purveyors!


January 2020 Newsletter Old School Sloppy Joes

Having just written the above brings to mind the many delicious treats we enjoyed this past year. Here’s a quick reprise of six of our top stories, as selected, prepared and enjoyed by you!

Thanks to Maria and Lexi for first inspiring this CUCUMBER, AVOCADO, FETA SALAD. Yes, we enjoyed seconds (I had thirds!) of this crazy, simple EASY ASIAN SLAW. Remember when we got messy with these OLD SCHOOL SLOPPY JOES, but soon after got fancy with this classic CHICKEN WALDORF SALAD? Love these recipes!

Your last two picks put big smiles on our faces: this COCONUT LAYER CAKE, because it was something we worked really hard on to get right, and then you LOVED it – yippee! And lastly DINNER ON THE DOCK 2019 – because Carol and I put our heart and soul into making this annual Weekend at the Cottage feature special for you. To those who sent in photos of your take on it, we’re so, so appreciative. Yay!


January 2020 Newsletter Turkey on the road

I’m going to end this newsletter circling back up to how it started. The concept of 2020 – a new year, a new decade – got me thinking about fresh starts and new beginnings.

Now, I could start by laying on a bunch of sappy expressions, but having gone back on previous newsletters… been there done that, LOL! I could try to inspire you with a motivational yarn, something about ants not being able to lift trees from forests they can’t see – yikes, where’s this going Nik?!

Instead, I’m going to sort of prognosticate on what lies ahead.

The weather forecast will call for sun and warm temperatures, but there will still be rain and days when it’s extra chilly.

Sometimes the lake is going to be so choppy it might take us an hour to paddle 20 feet, while other times it’ll be so still, the bugs gliding along the surface will be moving faster than the canoe.

We’re going to eat and drink some fabulously tasty things, except for the times when we muck up a recipe or the power goes out or we run out of bevvies, and then we’ll vow it will never happen again!

There will be moments when we get stressed out by the silliest things, but there will also be times when we just doze off, lying in the hammock, without a care in the world.

I bet we’ll have the best times with our family and friends, where we hug and laugh and it will all be perfect. Yet, I know there will be times when one of us will misspeak and feelings will get hurt, and we might forget for just a moment why we love someone so deeply.

Most importantly, I’m envisioning all of us bringing our best game. Now’s the time to be thinking about getting ourselves centered, standing tall and shining brightly, so we need to make sure to take care of ourselves first. When we do, we’ll be able to handle the good, the bad and even the ugly, whatever comes our way.

I have a funny feeling 2020 is going to be the best year ever. I just feel it! Now the big question… you in?!
