A generous compliment of assorted green vegetables, quick-cooked in vegetable broth with mint, apple and pear, then pureéd into a delicious and HEALTHY GREEN SOUP.

The idea for this recipe came to me about the same time that I started to enjoy my DETOX JUICE. The plethora of health professionals and dietitians can’t be wrong – green vegetables are good for us and we need to eat more of them.

This recipe for HEALTHY GREEN SOUP is open to experimentation. Check out the various vegetables I assembled, but also start thinking about the favourites you might like to substitute or add in yourself. Here are some tips to ensure you end up with a soup that lives up to all this praise.

Leafy Greens – Look for kale, collard greens, dandelion, spinach, swiss chard and watercress – all loaded with vitamins and nutrients. Make sure you rinse all leafy greens thoroughly before you use them.

Fibrous Greens – Vegetables like asparagus, broccoli, celery, Brussels sprouts, cabbage, beans and bok choy will give you a generous dose of your daily fiber.

Enhancers – I added distinct flavours by using ginger, leeks, and mint, then tossed in some apple and pear. You will be surprised at many layers of flavour they add.

Broth – If you can, make your own pure vegetable broth as I did HERE. You can use beef or chicken stock in a pinch, but I think keeping this recipe vegetarian yields a cleaner taste.

TimingLess cook time is SO MUCH BETTER. You’ll need to sweat the heartier vegetables like leeks, ginger, garlic and celery. Once the greens and broth are introduced bring to a near boil. Add any herbs and fruit and wait a moment then, pureé and serve. You’ll want to taste all that freshness.

Ingredients & Amounts

  • 1 bunch of spinach, washed, dried, chopped
  • 1 bunch of collard greens, washed, dried, chopped
  • 1 bell pepper, seeded and chopped
  • 1 head of broccoli, chopped
  • 3 leeks, washed and chopped, greens discarded
  • 2 ribs of celery, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 knob of ginger, peeled and chopped
  • 3 cloves of garlic, peeled and chopped
  • 4 cups pure vegetable broth
  • 1 Granny Smith apple, cored and chopped
  • 1 Bartlett pear, cored and chopped
  • 2 sprigs of fresh mint
  • 2 tablespoons of coconut oil


  1. Melt coconut oil in a soup pot on medium heat. Add leeks, celery, ginger, garlic and broccoli. Sauté until slightly softened and fragrant.
  2. Add greens, peppers and stock. Cover and bring stock to near boil, stirring frequently.
  3. Remove from heat, add pear, apple and mint, and cover. Allow to rest for 5 minutes. Carefully puree soup with a hand blender, or in a food processor or blender.
  4. Add salt and pepper to taste and serve with a wedge of lemon.
