I received quite a bit of feedback about the DETOX JUICE recipe I posted in January. It was especially encouraging to hear everyone’s willingness to add more fresh produce to their diets, so here’s another recipe with plenty of fresh fruits and vegetables. A toast to our quest for a healthy 2016!
A few reasons why I highly recommend this fresh GOLDEN BEET-CARROT JUICE:
1) CARROTS – they offer a superior source of vitamin A (from beta-carotene), biotin, vitamin K, potassium and vitamin B6. Eating them may reduce the risk of cancer, lower blood cholesterol, and that vitamin A is attributed to improving eye health.
2) GOLDEN BEETS – regardless of colour, all beets have have the same nutritional value. They’re rich in manganese, potassium and folic acid, plus are high in fibre yet low in calories. Beets are reputedly high in antioxidants, help lower cholesterol, and may support our cardiovascular systems and digestive functions. Can’t beet that!
3) GINGER – this wonder root helps with digestion, boosts the immune system, acts as an anti-inflammatory, and is loaded with calcium, potassium and magnesium.
4) LEMON JUICE – lemons are an excellent source of vitamin C and may help lower the risk of heart disease, cancer and kidney stones.
This is without a doubt my favourite fresh-prepared juice, and I find it refreshing, tangy and tasty. I use golden beets to compliment the colour of the carrots, and am always surprised at how the addition of ginger and lemon juice brighten the overall taste.
