Ingredients

Directions

  1. Defrost puff pastry following package directions.
  2. Prepare filling: Melt butter in a skillet on medium-high heat. Add apples and toss in butter to coat. Cook for 3-5 minutes to soften. Sprinkle with brown sugar, cinnamon and salt and toss or stir in the skillet. Sprinkle with cornstarch followed by apple cider vinegar. Toss and cook until the mixture thickens. Remove from heat and set aside to cool.
  3. Preheat oven to 400°F.
  4. Prepare turnovers: Whisk egg and water together and set aside. Roll pastry out into a 12-inch square and cut into 4 smaller squares. Add a spoonful of the cooled apple mixture into the bottom right triangular section of each square of dough, leaving about ¼-inch from the edge untouched. Sprinkle filling with nutmeg. Brush egg wash along the edge of the pastry and fold the square over to create a triangle, covering the filling within. Press the edge of the dough together using a fork.
  5. Transfer to parchment-lined baking sheet. Cut three small slits onto the top of each turnover. Brush with egg wash and sprinkle with sanding sugar.
  6. Transfer to oven and bake for 20 minutes or until top is a light golden colour. Remove from oven and cool for 30 minutes.
  7. Glaze turnovers: When turnovers are completely cooled, place the icing sugar and cream into a small bowl and stir thoroughly to combine. Transfer glaze into a piping bag or small storage bag. Snip off a tiny bit of the corner or end of the bag. Squeezing the bag gently, drizzle the glaze in a zig zag pattern by going back and forth over the turnovers.

As always, we have two goals for much of what we make and serve to our friends and family. The first is for the recipe to be easy. The second is for it to be really tasty. These EASY APPLE TURNOVERS? Check and check! We love them and oh, one other thing: so will you!

Before I ease into this one, I bet some of you are here for your daily dose of apples, right? Well, you’ve certainly come to the right place because we love ‘em! THE LIST

The ingredient list for this recipe features readily available ingredients. Included are a couple that give a nice pop to the flavour of this simple baked good. As with all our recipes, we suggest using organic and locally sourced ingredients whenever possible. You will taste a difference.

We used CORTLAND apples for this recipes, but others work too!

APPLE LOVE

As mentioned, we just love apples. They’re so easy to work with, but we also like how different these homemade turnovers taste depending on the variety of apple used. We used Cortlands for this story but others work too. Expect the same fab flavours if you use Idared and Crispin apples too.

PUFF THE MAGIC PASTRY

Good news! I’m telling you NOT to make the pastry from scratch. We suggest using store-bought puff pastry available in the frozen section of your favourite local grocery store. Not only does it taste good, but it’s simple to work with too. As always, just follow the directions listed on package, whether you’re doing the defrost on the counter or a fridge defrost overnight.

FLAVOUR BOOST

This is one of those recipes that invites a bit of tweaking, so I played around with a few ingredients to create a pleasing pop of flavour. Who knew brown sugar, apple cider vinegar, kosher salt, cinnamon and nutmeg would be so much fun together? Trust me on this one; it all really works!

SKILLET SET

Cooking the filling for these EASY APPLE TURNOVERS is an important step. The apples caramelize and soften up so that the filling allows for an easy bite through the pastry. Using a skillet for this step provides a more expansive cooking surface than a small saucepan, so the apples cook yet don’t get mushy. You’ll see.

EN POINTE

This recipe yields eight turnovers, and we suggest making them in two batches using a square of puff pastry for each batch. Rolling the dough out and cutting it into four squares is easy enough, as is filling each square with the flavourful apple. The most important step in the assembly is to brush the edge of the turnovers with egg wash so that the pastry sticks together when folded over. That egg wash will keep the turnovers together, and you en pointe with presentation.

SPARKLES

Finish the folded edge of the turnovers with a run of fluting using the tines of fork. It adds a pleasing, finished look to these treats. Also, remember to cut three little slits into the pastry to allow for steam to escape them as they bake. Finally, finish it all off with a brush of the egg wash across the top followed by a sprinkle of sanding sugar. Who doesn’t love a sparkly finish?

GLAZED
