Something amazing happens when I get nine hours of sleep, I wake up rested and hungry. I wish you were here because I’ve whipped up something delicious to eat and yes, BREAKFAST IS SERVED!
Most mornings at the cottage begin with standard fare – either granola or oatmeal, a side of fresh fruit salad and maybe a piece of toast or two. If guests are visiting I also pick up some bagels from St. Urbain located in Toronto’s St. Lawrence Market. That first meal tides us over until we work on brunch or lunch later in the day.
This weekend it’s “just us” and I got up feeling inspired to make breakfast a bit special. A quick hunt through the fridge yielded some choice finds. Breakfast went something like this:
1) Gluten-free bread, toasted and then softened with a quick swipe of unsalted butter.
2) A subtle layer of herbed goat cheese, brought first to room temperature.
3) Two ¼ inch slices of vine-ripened heirloom tomatoes.
4) A few paper-thin slices of gravlax (raw, dill-cured salmon).
5) A sprinkle of fresh radish sprouts plus a pinch of kosher salt and a dash of fresh-cracked black pepper.
I scrambled some eggs, plated everything and served the meal with freshly-squeezed orange juice a fresh-brewed coffee.
It was easy to prepare and I think the goat cheese, gravlax and radish greens all added unique flavours to this delicious meal.
A bit of extra effort and a few unexpected ingredients can turn the mundane into something memorable. I know you’ll agree that’s what everyone wants whenever… BREAKFAST IS SERVED!
