Ham and Cheese Breakfast Sandwich

Ingredients

  1. Preheat the oven to 275°F. Line a baking sheet with parchment paper.
  2. Place the bottom halves of the croissants onto the baking sheet. Divide the ham between the two croissants, clustering slice by slice into place.
  3. Heat a small skillet on low. When it comes to temperature, add the butter and melt. Add the eggs, followed by a sprinkle of salt. Move the eggs about in the pan to soft scramble. Remove from the heat before they cook dry.
  4. Spoon the scrambled eggs on top of the ham, dividing it evenly between the two croissants. Add a sprinkle of black pepper followed by 3 slices of cheese onto each. Place the tops of the croissants onto each sandwich. Transfer to the oven and baked for 10 minutes or until the cheese has melted. Serve immediately.

All the credit for this amazing breakfast idea goes to Carol. She called from the city to discuss our upcoming post and recipe ideas, where we both agreed that we’re loving the way you’ve embraced our efforts to offer simple yet delicious recipes that everyone can make and enjoy.

For this HAM AND CHEESE BREAKFAST SANDWICH, Carol gave me the broad stroke on how she and her husband create an easy morning meal for their family. I worked through the process, figured out a nice balance of readily available ingredients and gave it a simple twist at the end to make it extra special.

Ingredients for our Ham and Cheese Breakfast Sandwich

 BAKED GOODS

I made this breakfast sandwich using croissants for their flavour as much as their texture. The buttery flakiness of this wonderful crescent-shaped baked good is the perfect size for a breakfast portion. This recipe is written for two sandwiches, but plan one per person.

Although the croissant held the sammie together, remember that variation is the spice of life. You’ll have the same great success using other baked goods such as English muffins, kaiser rolls and ciabatta buns too.

Thinly sliced cooked ham

BAKED HAM

If you happen to have made our famous OVEN-BAKED HAM, this is a great morning-after use for leftovers, slicing the ham up as thinly as possible. Another option is to use thinly sliced baked ham available in your local supermarkets. If purchasing from the store, yes, you can use pre-packaged sliced ham, but I suggest having it sliced to order at the deli counter. They’re often able to get those paper thin slices which work best in this recipe.

Soft scrambled eggs

SOFT EGGS

It’s important to get the eggs right when you scramble them. Set your skillet on a low heat, melt the butter, add the whisked eggs and then gently push them around the pan to scramble. Most importantly though, take the eggs off of the heat when they’re still a bit glossy – don’t scramble them hard. This will ensure that after the sandwich bakes in the oven, the eggs will still come out nice and soft.

Cheddar cheese

SUCH A CHEESE

Cheddar is my go-to cheese choice whenever I’m pairing a cheese with ham. In this recipe, it melts perfectly in the oven and I love the flavour of the cheese with the eggs and ham. That said, what do I know? If you’d rather make this using swiss, havarti, mozzarella or Monterey Jack, by all means do so. You really can’t (ever) go wrong with cheese, am I right?

BEST BAKE

My final twist to Carol’s idea is to place the assembled breakfast sandwiches into the oven for 10 minutes. This warms the croissant and ham, but it also melts the cheddar cheese. This changes the first bite from “nice” to “Oh my goodness, this is so delicious and awesome I am making this again!” It’s a nice touch.

If you want to add a bit more excitement to this breakfast idea, you can serve our HOLLANDAISE HACK on the side for dipping or sauce drizzling. You can also place out little nappy bowls and serve this HEALTHY FRUIT SALAD. You can also include a side with this sammie, like these CRISPY HOME FRIES.
