Freshly-squeezed cucumber juice brightened with lime, strengthened with premium gin, and a splash of grapefruit soda for sparkle. This thirst-quenching CUCUMBER COOLER is divine!

I really appreciate when guests ask if they can contribute to the menu planning for the weekend. I always accept these kind offers and look forward to enjoying whatever our friends prepare. About three years ago, we also started the tradition of the Cocktail of the Day, where guests dream up and then bring something wonderful to drink.

Our friends Sherman and Julius recently visited and made this tasty Cucumber Cooler. The recipe was first given to them by their friend Dennis, so a big thanks to these gentlemen! I just love the way really good recipes always make the rounds.

The Cucumber Cooler is a perfect thirst quencher on a sunny afternoon. The recipe calls for freshly-squeezed cucumber juice, which you can make yourself or purchase at a juice bar or specialty grocer. The recipe also calls for a sparkling citrus-based soda to give the cocktail a bit of glimmer right before you serve. We used the San Pellegrino POMPELMO and loved how the grapefruit flavours played off the lime, cucumber and gin.

Ingredients & Amounts

  • 16 ounces cucumber juice, freshly-squeezed
  • 8 teaspoons lime juice
  • 8 ounces premium gin
  • splash of sparkling citrus soda
  • cucumber slices and fresh mint

Instructions

  1. Pour freshly-squeezed cucumber juice into a cocktail shaker half filled with ice. Add gin, lime juice and shake.
  2. Pour cocktail into ice-filled old fashioned glasses lined with cucumber slices to ¾ full.
  3. Fill each glass to top with sparkling citrus soda.
  4. Garnish with straws and sprigs of fresh mint. Serve immediately.
